Potage Parmentier Soup or Leek and Potato Soup – when you are cold, when you are busy.
Is it cold outside? Do you need a really quick but substantial soup with minimum ingredients? Then Potage Parmentier or Leek and Potato Soup is ideal! Out of numerous recipes this one made with 5 Elements and super special croutons is just perfect! Note: for your croutons you can use any type of bread you have in the house.
To make the croutons
Dice 2-3 bread slices of your choice, add them to a large mixing bowl with spices in the following order:
- Sweet 2-3 tablespoons of rapeseed oil, a pinch of paprika, a pinch of smoky paprika (optional),
- Pungent a pinch of freshly ground black pepper and coriander, a pinch of chilli cayenne (optional),
- Salty a pinch of fine salt,
- Sour a pinch of basil, a few drops of lemon juice,
- Bitter a pinch of turmeric, a pinch of thyme or rosemary.
Shake the bowl several times so that all bread pieces are coated with the spices. Grill in the oven for 10-15 minutes. Make sure the croutons do not get burnt.
To make the soup
Heat up a large cooking pan and add the following:
- Sweet 2 tablespoons of oil, 2 large, peeled and diced potatoes,
- Pungent 2-3 sliced leeks, a pinch of black pepper, a pinch of chilli cayenne, a pinch of freshly-grated nutmeg,
- Salty a generous pinch of salt, a few drops of soy sauce (optional), cold water to the level of the vegetables.
Bring to a boil and cook the vegetables until the potatoes are soft and continue:
- Sour a pinch of basil or parsley, 1 tablespoon of lemon juice,
- Bitter a pinch of turmeric, a pinch of thyme (preferably fresh but dried will be good as well).
Boil the soup for another 2-3 minutes and blend it.
Serve hot garnished with croutons, a splash of olive oil and some thyme.
