How to make the easiest Tomato Harissa Soup

Tomato Harissa Soup – minimum ingredients, maximum flavour

The Tomato Harissa Soup is very filling, super quick and can be made even if your pantry is nearly empty. All you need is an onion and a can of tomatoes plus some spices. What is more, it does not require vegetable stock, which makes cooking less complicated and authentically easy. You can find my inspiration here to try it and compare the results.

The procedure 

In a large saucepan add the following:

  • Sweet 2 tablespoons of rapeseed oil, 1 large onion roughly sliced, fry until translucent, 2-3 teaspoons of brown sugar, 
  • Pungent 4-5 garlic cloves roughly sliced, 2-3 teaspoons of harissa paste, a pinch of hot smoky paprika, a pinch of black pepper, 1 teaspoon of oregano, 
  • Salty 2 cups of cold water, a generous pinch of sea salt, bring to the boil and continue, 
  • Sour 1 can or carton of tomatoes, 2 tablespoons of tomato paste, 1 teaspoon of lemon juice, 1 teaspoon of dried basil, 
  • Bitter a pinch of turmeric, 
  • Sweet 2 tablespoons of olive oil. 

Bring the soup to a boil and simmer at low heat for about 3-4 minutes. Just to allow the flavours to blend. There is no need to cook it for very long as the tomatoes are already processed. Taste your soup. If you feel there is one or more flavours missing add a little bit of each in the same order as above. Do not hesitate to go around the cycle two or three times. The aim is to get the perfect balance of flavours. 

Blend before serving. The amounts will serve 3-4. Sprinkle with some black onion seeds (optional). Tomato Harissa Soup will go perfectly with cheesy toasts, courgette chips or French cheese puffs.
