No Bake Crepe Birthday Cake with a Surprise

Do you want a homemade birthday cake with a difference? Do not feel like baking a sponge? Are you bored with the same sugar icing? Take a look at this No Bake Crepe Birthday Cake with whipped cream topping and a surprise inside. I got inspired by this amazing recipe and modified it to a children’s 5-element birthday cake and the effect was just… Wow!

To make the 5-element crepes

The crepe used for the birthday cake are exactly the same as the ones used to make crepes Suzette

In a large mixing bowl or a jug add the following:

  • Sweet 1 egg whole, 1 cup milk (optional), 1 tablespoon of mild tasting oil, mix the ingredients,
  • Pungent  a pinch of ginger, 
  • Salty a pinch of salty, 1 cup cold water (if you don’t want to use milk, add 2 cups of water)
  • Sour 1 cup of plain flour, 3-4 tablespoons of wholemeal wheat flour, 
  • Bitter a pinch of turmeric. 

Mix all the ingredients well. Make sure there are no lumps in the batter, which should be quite runny to make the crepes thin. 

To make a medium-sized cake which will serve 6-8 people you will need about small 20 crepe. 

For the whipped cream topping 

The whipped cream used to make Irish coffee tastes so amazing that the same recipe can be used here for the cake. 

In a medium-sized mixing bowl add the following: 

  • Sweet 100ml double cream, 2 teaspoons of icing sugar, 2-3 drops of vanilla extract (optional),
  • Pungent a tiny pinch of chilli cayenne, 
  • Salty a small pinch of fine sea salt, 
  • Sour 5-6 drops of lemon juice, 
  • Bitter a small pinch of turmeric. 

Whisk with a hand mixer until the cream starts to thicken. Do not beat it for too long as it will turn into butter. 

To assemble the cake

You will need about 10-15 medium to large strawberries sliced. Two small bananas sliced. 

Spread a little bit of strawberry jam on the edges of the cake and put sliced strawberries on the jam. Cover it with another crepe and assemble sliced bananas in the same way. Make sure to avoid putting the filling the centre of the pancakes, as it will be cut out later on. 

Once all the layers are put together cut out a hole in the centre using a glass for long drinks. Fill the hole with sweets of your choice and cover with a crepe. Finally, apply the whipped cream on top and around the cake. The pancakes do not need to be covered very thoroughly. 

Decorate the cake with strawberries and some sprinkles (optional). Serve immediately. Slice the cake very gently as it collapses easily, like the one in the photo, especially if there are impatient children around. 🙂
