Crepes with apple-walnut filling – the best for autumn!
Crepes with apple-walnut filling are one of the most satisfying desserts and a real comfort food for autumn. There are lots of different recipes to follow. However, homemade, 5-element crepes are the best, guilt-free sweet you can have any time you want.
The preparation
Wash, peel, quarter, core and dice 2 medium-sized apples. Roughly chop 3-4 walnuts.
The procedure to make the apple sauce
In a small cooking pan add the following:
- Sweet diced 2 apples, 2-4 tablespoons of brown sugar (depending on how sweet your apples are), a pinch of cinnamon,
- Pungent a pinch of ground ginger, a tiny pinch of cayenne (optional),
- Salty a pinch o salt, 2-3 tablespoons of cold water (to prevent the apples from sticking to the bottom),
- Sour 1 tablespoon of lemon juice,
- Bitter chopped 3-4 walnuts, a pinch of turmeric.
Stir all the ingredients and simmer on low heat for about 10 minutes until the apples release juice and start to fall apart. However, do not let them all become mushy.
To make the 5-element crepes
In a large mixing bowl or a jug add the following:
- Sweet 1 whole egg, 1 cup milk (optional if you choose to use water), 1 tablespoon of mild tasting oil, mix the ingredients,
- Pungent a pinch of ginger,
- Salty a pinch of salty, 1 cup cold water (if you don’t use milk, add 2 cups of water)
- Sour 1 cup of plain flour, 3-4 tablespoons of wholemeal wheat flour,
- Bitter a pinch of turmeric.
Whisk the ingredients. Make sure there are no lumps in the batter. It should be runny for your crepes to come out thin.
Serve your crepes rolled, filled with the sauce and sprinkled with some icing sugar (optional). Crepes with apple-walnut filling will go with your autumn tea with lemons preserved in honey.
