Asparagus potato and feta soup – the simplest way! 

This 5-element asparagus potato and feta soup is probably the simplest ever! First of all, you do not peel the potatoes. Second of all, you stick to minimum ingredients. Finally, you do not blend the soup. How wonderful! It saves you prep and washing up time and tastes just amazing. See for yourself.

How to prep asparagus for cooking

If you have seen the Bridget Jones film and you think about all the myths connected with cooking asparagus you might be a bit “asparagus shy”. Like I was. Until I tried. And realised that asparagus is not as tricky as it may seen. Just to make sure you get it right you can find some useful tips here.

The preparation

Wash thoroughly 4-5 medium-sized potatoes. There is no need to peel them but feel free to do so, if that is what you prefer. Dice the potatoes. Peel and slice 1 medium-sized onion and 2-3 garlic cloves. Wash and prepare 1 bunch of green asparagus. The easiest way: after snapping the hard bottom of each asparagus, cut the upper part into 4-5 cm long pieces and slice the middle part of the stem into 1 cm thick pieces. (You may cut them into longer pieces and make diagonal cuts.) The amounts will make 3-4 portions. 

The procedure 

In a large cooking pan add:

  • Sweet 2 tablespoons of oil, the onion sliced in semi-circles, fry until translucent and add the potatoes, 1 carrot sliced and fry for 1 minute, shake the pan several times and continue with
  • Pungent 2-3 garlic cloves sliced, a generous pinch of black pepper, a small pinch of cayenne (optional), 
  • Salty 1/2 tablespoon of salt, cold water to the level of the vegetables or slightly above, bring to a boil and cook on medium-low heat until the potatoes are soft and add:
  • Sour the asparagus, 1 tablespoon of lemon juice, a pinch of basil, 
  • Bitter 1/2 teaspoon of turmeric. 

Stir all the ingredients and boil for another 1-2 minutes. Asparagus does not like to be cooked long, so make sure you do not overcook it. 

Serve the soup garnished with feta cubes and some dill tops.
