How to Whip Delicious Dalgona Coffee with natural coffee

Normally Dalgona Coffee is made with instant coffee. However, it is a highly processed product so it does not really go with the 5-element Theory. Personally, I am not very keen on instant coffee. That is why I came up with the idea of preparing Dalgona coffee with natural coffee. At first I was a bit afraid it would not get whipped but it did and was delicious.

Why not instant coffee

To get instant coffee, green beans are roasted, ground and mixed with hot water. Then the mixture is strained to get rid of ground coffee. What you get at this point is basically liquid coffee. The kind of thing you actually make with espresso or moka. With instant coffee the process continues and the liquid is frozen. Then the solid is ground into flakes and put into vacuum, which takes the water away. What is left is the flakes of instant coffee which you dissolve in water. That is in a nutshell. 5-element Dalgona Coffee with Vietnamese brewing

To start with, I added some spices to my ground coffee to get tastier, richer and more balanced flavour. 

In a bowl, add the ingredients in the following order: 

  • Bitter a few tablespoons of ground coffee, a pinch of turmeric, 
  • Sweet a pinch of cinnamon, 
  • Pungent a pinch of ground ginger, 
  • Salty a tiny pinch of salt, 
  • Sour a tiny pinch of citric acid (although, if you have not got any at home you can skip it and this stage altogether). 

Mix all the ingredients well and brew your coffee. 

The whipping

In a large bowl add 8-10 tablespoons of your coffee and the same number of tablespoons of sugar. Using a hand mixer, whisk the liquid until thick and smooth. It might take you 5 to 10 minutes, depending how quick your electric whisk is. 

Fill a glass (it must be a glass, not a cup, so that you can admire the content) halfway or three quarters with milk. It can be cow’s milk or any plant milk of your choice. Add some ice cubes and pour the whipped mixture. 

Dalgona Coffee will go perfectly with Pannukakku – Finnish Oven Pancake or with Apple Sponge Cake.
