Watermelon Salad with Lemon Dressing – perfect for summer
The Watermelon and Feta Salad with Honey and Lemon Dressing is a fantastic no-cook option for hot days. There are numerous variations of the salad. However, all the ingredients put together with the 5-element dressing make it absolutely delicious.
No dressing?
The original Watermelon and Feta Salad usually comes with no Honey and Lemon Dressing and tastes fantastic. However, I felt it could be much better. So, I came up with the dressing which makes it all just perfect. Try it yourself.
To make the salad
The amount of the salad below serves 2 as a side or a dessert option. Cut half a watermelon into cubes and add it to a bowl. Cut half a regular feta pack into cubes. Make them slightly smaller size than watermelon and arrange them on top. Scatter 10-20 mint leaves over. Finally, drizzle with the honey and lemon dressing.
The amounts below will make about 150-200 ml of the dressing. This means you will get enough sauce to serve the whole watermelon. Unless you decide to add much more of the dressing, which is actually quite a tempting idea.
To make the dressing
Use a medium-sized jar with a lid. In this way you will be able to shake the sauce instead of stirring it. Or just use a small bowl. Add the ingredients in the following order:
- Sweet 3-4 tablespoons of olive oil, 2 generous teaspoons of honey, mix them well,
- Pungent add a pinch of cayenne pepper, a pinch of freshly ground black peppercorns and red peppercorns,
- Salty a pinch of sea salt, 4 tablespoons of cold water,
- Sour 3-4 tablespoons of lemon (or lime) juice,
- Bitter a pinch of turmeric, lemon zest of 1/2 lemon (optional).
Mix or shake all the ingredients well. Drizzle over the salad immediately. If you leave the dressing for a while the juice will set and the oil will come to the top which is a natural process. Shake well before next use.
