How to arrange watermelon and feta Tetris salad

A Tetris with watermelon and feta? Why not?

This watermelon and feta Tetris salad is not only a super option for hot summer days but also makes an impression on children. It is a variation of my old watermelon and feta salad with honey and lemon dressing, which you can find here. However, the inspiration for the watermelon and feta Tetris salad came form here.

Feel free add fruit or vegetables of your choice. I think strawberries would look and taste amazing in this combination.

For the version below I used: watermelon, cucumber, yellow melon, radishes, feta cheese, olives, red onions, mint leaves and an amazing 5-element lemon dressing. The amounts presented below easily serve 4 as a side.

Preparation

Peel and cube your fruit and vegetables and feta cheese. The cube size is up to you but should be similar. I adjusted mine to the size of the radishes, which was about 2cm x 2cm. Slice the onion and separate the rings. Drain 8-10 black olives.

To make the dressing

Use a medium-sized jar with a lid as a shaker. Add the ingredients in the following order:

  • Sweet 3-4 tablespoons of olive oil, 2 generous teaspoons of honey, mix them well,
  • Pungent a pinch of chilli flakes, a pinch of freshly ground black and red peppercorns,
  • Salty a pinch of sea salt, 1 tablespoon of cold water,
  • Sour 3-4 tablespoons of lemon juice, 5-6 shredded mint leaves,
  • Bitter a pinch of turmeric, lemon zest of 1/2 lemon.

Shake the ingredients well.

Arrange the cubes on a plate or a platter. On top of them arrange onion rings and black olives and drizzle with the dressing. Serve immediately.

Our watermelon and feta Tetris salad went really well with crispy fired aubergine.
