How to sizzle Crispy Fried Aubergine

Crispy fried aubergine – the best with 5 Elements! 

You can make your crispy fried aubergine (or eggplant) in many different ways, it can be Greek style, Italian style or a simple one, like this one here, the options are endless. I have tested some of them, adapted them and came up with the recipe below, which is just perfect! And really quick. Check it out.

The preparation 

Wash and cut 5 small round aubergines or 1 large aubergine into about 1cm thick slices. There is no need to sprinkle them with salt and set aside but feel free to do it if you prefer. 

The procedure for egg mixture

In a small mixing bow add the following:

  • Sweet 1 egg, beat it slightly, a pinch of sweet smoky paprika, 1 tablespoon of grated parmesan, 
  • Pungent a pinch of black pepper, a pinch of cayenne (optional), a pinch of freshly ground coriander, 
  • Salty a pinch of salt, a few drops of soy sauce, 
  • Sour a pinch of dried basil, 
  • Bitter a pinch of turmeric, a pinch of thyme (optional). 

Mix all the ingredients well. Feel free to add some more spices, if you have your favourite ones, or eliminate some, if you do not like some, but always stick to the rule of adding all 5 flavours.

To make the coating 

In a separate pasta bowl or on a plate mix 3-4 tablespoons of breadcrumbs with 2 tablespoons of sesame seeds. 

Dip each aubergine slice in the egg mixture and coat it with the breadcrumbs. Shallow fry in rapeseed oil or any other oil of your choice on medium heat for 1-2 minutes on both sides. Drain on a paper towel to absorb the excess oil. 

Serve hot on their own or with yoghurt or this amazing tzatzyki sauce. The crispy fried aubergines can be a great side to your dinner as well.
