How to deal with stinging nettles

Someone once told me that stinging nettles live close to people. So, it should not be difficult to find some around your house. Look for them in areas away from traffic or any other pollution. Pick fresh medium-sized leaves growing on new sprigs. Avoid old overgrown plants as they tend to be tough and stringy. Always rinse them gently with water because they can collect surprising amount of dust on their surface.

The procedure

To make the batter, in a small bowl add the following:

  • Sweet beat 1 egg, then add
  • Pungent a pinch of ground ginger,
  • Salty a pinch of salt, 2 tablespoons of cold water,
  • Sour 3-4 tablespoons of wholemeal wheat flour,
  • Bitter a pinch of turmeric.

The batter should not be too runny because it will not stick to the leaves. It should not be too thick either as it will cover the leaves with thick coat and dominate the flavour.

Mix all the ingredients well and dip each leave holding it by the stem into it. Deep fry for about 1 minute on each side or until golden.

Sringing Nettles Crisps go perfectly on their own but you can have them as a side with Garlicky Runner Beans with Tzatzyki.

For other ‘foraged crisps’ or tempura see: sage tempura or elderflower tempura.
