Pannukakku – a baked pancake from Finland
Pannukakku, the Finnish Oven Pancake is a completely new take on pancakes. The amazing thing about it is that you make it in the oven. So, once you get the mixture done, you get it in the oven and wait impatiently. No messing around with the frying pan. It is especially handy if you have children hoovering around you, who cannot wait to get ‘just one pancake, please’. And… the pile you have made is gone quicker than you are able to fry any more.
Pannukakku – a bit unpredictable kind of pancake
Pannukakku can be little bit unpredictable, so you need to watch it during the process to avoid burning it. Also, like in the picture here, pannukakku sometimes grows enormously just to go flat the moment you get it out. Don’t worry about that. What to eat Pannukakku – Finnish Oven Pancake with
Pannukakku can be eaten sweet or savoury. For the sweet variation you may sprinkle it with icing sugar and serve with some fresh fruit. Also, you can top it with a jam or marmalade of any kind. Maple syrup, sweet yoghurt, whipped cream will all go well, too.
The procedure
Serves 4-6 people.
In a small pot melt 3 tablespoons of butter and set aside.
In a large mixing bowl add the following:
- Sweet 2 eggs, 3 tablespoons of sugar, whisk until fluffy; add 2 cups of milk and whisk again,
- Pungent a pinch of chilli cayenne,
- Salty a pinch of salt,
- Sour 1 and 1/3 cup of plain wheat flour,
- Bitter a pinch of turmeric,
- Sweet the melted butter.
Mix all the ingredients until bubbly and set aside for a few minutes. In the meantime, heat up the oven to 180 degrees C. Pour the batter to your baking tray lined with baking parchment and bake for 30-35 minutes. Keep an eye on the pancake to prevent it from burning.
Serve immediately with Fresh Orange and Ginger Tea or Green Tea with Red Peppercorns.
