Fry your own most succulent onion rings in beer batter

Out of the multitude of recipes for onion rings, Onion Rings in Beer Batter definitely stand out. Thanks to the beer batter they taste amazing!

To make the batter

Use a large mixing bowl and add the following ingredients:

  • Sweet 1 egg, 1 tablespoon of olive oil, mix with balloon whisk, 
  • Pungent a generous pinch of cayenne pepper,  a pinch of freshly ground black pepper, 
  • Salty a big pinch of sea salt, whisk again, 
  • Sour 150 g plain flour, 
  • Bitter 200 ml beer, added in portions, a generous pinch of turmeric. 

Add the beer in 2-3 rounds whisking the batter. The batter should be quite thick, otherwise it will not hold onto the onions. If you feel the batter has the right thickness, stop adding the beer. If the batter gets too runny, add some more flour. 

Prepare the rings

Set the batter aside and, in the meantime, prepare the onions. The amount of the batter will make rings of 3 large onions. Peel them and cut into 1/2 centimetre thick slices. Separate the onion rings gently making sure they do not break. During the process the onion membrane might get off but do not worry about it, it will get cooked at no loss of flavour. 

To fry the rings

Usually, onion rings are deep fried and you can do them this way. However, for health reasons and to use less oil, you can easily shallow fry them. They will be delicious too. In a large frying pan heat up a thin layer of oil, just enough to cover the whole surface and not deeper than the onion rings. Dip each ring in the batter and put onto the oil. When the ring is golden brown turn it over. 

Onion Rings in Beer batter go well as a party snack, just on their own, sprinkled with sea salt or with a choice of sauces. Or, they can be an unusual side to Ratatuille – French Vegetable Goulash
