A lot of goodness in Lemon Balm Leaves

Aromatic Green Tea with Red Peppercorns is made with foraged Lemon Balm. However, if there is no Lemon Balm in your area you can easily get a plant and grow it in your garden or in a pot on your window sill. Lemon Balm or Melissa (Melissa officinalis) has a lot of health benefits. For example, it treats a range of medical disorders which affect digestion, nervous system and liver. It is often said to ease stress and anxiety and improve sleep. It can help treat symptoms of upset stomach and acid reflux.

I also added some dried chamomile flowers, which you can forage or grow yourself too. Chamomile (Chamaemelum nobile) in turn contains antioxidants that may play a role in lowering your risk of several diseases, including heart disease and cancer. Chamomile has properties that may aid sleep and digestion, as well. It has anti-inflammatory effects which promote blood sugar control, protect against diarrhoea, stomach ulcers, nausea and gas. Although some people may be allergic to chamomile, negative side effects are very rare.

How to brew Aromatic Green Tea with Red Peppercorns – the brewing time!

Use a medium-sized tea pot and add the ingredients in the following order:

  • Sour 5-6 lemon balm leaves, 
  • Bitter 2 teaspoons green tea, 2-3 cups hot water (not boiling, wait about 3-4 mins before pouring it into the jug), 
  • Sweet 5-6 camomile flowers, 
  • Pungent 8-10 red peppercorns.  
  • Salty a few salt grains.

Infuse for about 5 minutes. Serve Aromatic Green Tea with Red Peppercorns hot or cold with some ice cubes. Drink the tea on its own or with 5-element Fluffy Japanese Soufflé Pancakes or Apple Sponge Cake.
