Tips

To prepare Lemons Preserved in Honey use any kind of liquid honey. The proportions below were made for 300 grams but you can use any amount of you have at hand.

If your honey is crystallised, put the jar in a small pot of water and heat it up at very low heat. Make sure the water does not boil as you do not want to boil the honey. Just heat it up for 10-15 minutes stirring from time to time until it gets runny. 

If you can, try to get unwaxed lemons and wash them thoroughly.

The procedure

In a medium-sized mixing bowl add the following ingredients: 

  • Sweet honey, 
  • Pungent a generous pinch of cayenne pepper (a heaped amount that goes on the tip of a teaspoon), 
  • Salty a generous pinch of sea salt, 
  • Sour thin slices of 2 medium-sized lemons (the weight of lemons roughly the same as the weight of honey), 
  • Bitter a generous pinch of turmeric. 

Mix all the ingredients well and leave in the bowl overnight. The honey will combine with lemon juice and the mixture will become runny. That is a natural process. The next day stir the mixture again and transfer to jars. In case there is still some crystallised honey at the bottom of the jars, shake them several times to help it dissolve. For an extra twist you may add to the jar a whole dried chilli pepper. 

Serving tips

To serve add 2-3 teaspoons of the honey and a slice of lemon to a cup of good quality black tea. For a variety, you may want to add a splash of rum or gin into your cup of tea. The lemon slices are also edible. The longer they will sit in the honey the sweeter and more flavoursome they will be.
