To make this avocado bagel sandwich you will need some nice bagels. If you can get them form a good local bakery or make them yourself it will be just ideal. We are lucky here as there is a nice bagel bakery nearby and the bagels they make are delicious.

Preparation
Hard boil 1 egg, peel it and chop roughly. Peel and roughly chop 1 avocado.
Procedure – the avocado and egg spread
Use a medium-sized mixing bowl and add the following:
- Sweet 1 avocado, mash it with a fork, 1 egg, mash it in with the avocado, 1 tablespoon of olive oil,
- Pungent 1 small onion, finely chopped, 1 small garlic clove, grated on a fine grater (like the parmesan one), 1/2 fresh chilli, finely chopped (adjust the amount of chilli depending on how hot you like it), a pinch of black pepper,
- Salty a pinch of salt, a few drops of soy sauce (optional),
- Sour 1 teaspoon of lemon juice, a pinch of basil or a leaf of fresh basil, torn into small pieces,
- Bitter a pinch of turmeric.
Mix all the ingredients well. Taste to check the flavour. If there is one or more of the flavours missing go over the cycle and add a little bit of each ingredient until you get the one(s) which are missing. Generally, it is advisable to have a little taste after adding each ingredient group to exercise your taste buds and learn different flavours. In this way, with a little bit of practice you’ll be able not only to assess what is missing, in a dish but also to improve the dish.
Final stage
Cut your bagel into halves. Assemble some greens of your choice onto the bottom part. Put some of your avocado spread on them. Arrange thin slices of radishes on top, sprinkle them with a little bit of salt and you’re done!
Serve your avocado bagel sandwich immediately. You may want to add more of, or change an ingredient. Feel free to add chives, sprouts, cucumbers, tomatoes or any other fresh vegetable.
