To make Apple Crisps
Wash your apples and dry them. Slice them carefully with a sharp chef’s knife. The slices do not have to be very thin. Actually, the thickness of the slices is up to your taste. Thinner slices will dry slightly quicker but thicker ones seem to have a bit more flavour.
The procedure
Line two or three baking trays with baking paper and place the apple slices one by one all over them. Fill the whole surface and sprinkle the apples with the following spices:
- Sweet cinnamon,
- Pungent ground ginger, a tiny pinch of chilli cayenne,
- Salty a pinch of fine sea salt,
- Sour drizzle with a few drops of lemon juice,
- Bitter a pinch of turmeric.
To distribute the spices evenly use a fine mesh tea strainer. Put each spice into it and shake it gently over all the apple slices.
To add a little bit of variation you may sprinkle some of the crisps with freshly ground cardamom instead of cayenne or some citric acid instead of lemon juice. There are endless possibilities, it is only up your imagination what you want to put on the crisps.
Serve as a party snack on their own or to go with Fresh Orange and Ginger Tea.
