A super-healthy variation
Crispy Courgette Chips or Zucchini Fries in Sesame Batter come in many different shapes and sizes and the original recipe you can find here. After a few alterations I suggest a super-healthy 5-element batter with sesame seeds. You can also use linseed or chia seeds as a replacement. Crispy Courgette Chips are a quick and healthy alternative to regular chips and will definitely make an impression on your guests.
Not only with courgettes
To make the fries you do not have to stick to courgettes. You can use any other vegetable, this can be sweet potatoes, broccoli or cauliflower or anything that comes to your head. Feel free to experiment.
To make the batter
The amount of batter below will make about 2 medium-sized courgettes.
Use a small mixing bowl or a deep pasta plate to combine the following dry ingredients:
- Sweet 4 tablespoons of bread crumbs, 2 tablespoons of sesame seeds, 2 tablespoons of grated parmesan,
- Pungent a pinch of black pepper, a pinch of chilli cayenne, a pinch of ginger,
- Salty a generous pinch of fine sea salt,
- Sour 1 tablespoon of lemon juice, 3-4 parsley sprigs, finely chopped,
- Bitter a pinch of turmeric.
In a separate bowl beat thoroughly 1 large egg.
To make the fries
Wash 2 medium-sized courgettes (do not peel them) and cut them across into halves. Cut them lengthways to get the size of large fries. Spread them on the chopping board and sprinkle with some salt.
In a large frying pan heat up a layer of cooking oil to cover the bottom of the pan. Dip each courgette piece one by one in the egg mixture and then in the dry mixture to get it covered evenly. Fry until golden-brown on both sides.
Serve warm on their own, with a sauce of your choice or as a side with Garlicky Runner Beans or Curly Kale with Garlic.
