This super easy mango chia seeds pudding is a fantastic alternative to shop-bought desserts. I got inspired by the recipe here and added some spices for better flavour and health benefits. What is more, children love the preparation when they can handle the seeds and feel their texture when they are dry, and then compare with their texture in your mango chia seeds pudding.
Non-messy recipe
It is a non-messy recipe as you only use a cup blender and then transfer the mixture straight into the serving containers.
The amounts below make 4 pudding containers of 100ml each.
What you will need
Chia seeds, 2 ripe mangoes, milk, honey, spices.
Preparation – mango
Use 1 large mango. Peel it, chop roughly and add to a blender cup. Blend until smooth and add the following ingredients:
- Sweet 2 generous tablespoons of honey, 1 cup of milk,
- Pungent a pinch of ground ginger,
- Salty a pinch of sea salt,
- Sour juice of 1 lime (or lemon),
- Bitter a pinch of turmeric.
Blend all the ingredients well. If the mixture is too thick add a little bit more milk and blend again.
Preparation – chia seeds
Add 2 flat tablespoons of chia seeds into each pudding container. Top them up with the mango mixture leaving about an inch (2,5 cm) of space between the level of the pudding and the rim of your container. Stir well and refrigerate for at least 4 hours or overnight.
To finish off
Peel and chop the remaining mango into small cubes. Add them onto the top of your pudding for a nice finish and enhanced flavour. Finish off your mango chia seeds pudding with some grated lime peel (optional).
