How to cook delicious homemade Garganelli pasta

Make your own garganelli pasta like a pro! 

The more pasta you make at home the more you want it! After being able to make tagliatelle or pappardelle with you eyes closed, have a go for garganelli. This homemade garganelli pasta was made on a gnocchi board but if you have not got one you can roll yours on flat surface.

Preparation 

Wash and dice 1/2 bell pepper. Slice 1 handful of black olives. Feel free to add any other vegetables of your choice. The amounts below serve 2.

To make the dough 

Sift the flour onto a work surface, make a well in the middle and sprinkle some turmeric, add eggs, sprinkle some ginger and salt in the following order: 

  • Sour 300g plain wheat flour,
  • Bitter a pinch of turmeric, 
  • Sweet 3 eggs, 1 tablespoon olive oil, 
  • Pungent a pinch of ginger,
  • Salty a pinch of salt. 

Once all the above ingredients are on the pile, ‘chop’ them with a knife. Try to fold the eggs into the flour. When all the ingredients combine, rub your hands with some flour and knead the dough. Give it about 2-3 minutes until smooth and elastic. Wrap the dough in cling film or sprinkle some flour onto the work surface, place the dough ball on it and cover with a bowl. Let it rest for 30 minutes. 

Divide the pasta ball into 4 parts and roll each quite thin (about 1-2 millimetres thick). Cut the pieces into squares roughly 4cmx4cm. Roll each square on the gnocchi board squeezing the ends firmly. Boil in salted water in batches for about 1-2 minutes until they all come to the surface.

To make the salad dressing 

In a small mixing bowl add the following:

  • Sweet 3-4 tablespoons of olive oil, 1 teaspoon of honey, 
  • Pungent a pinch black pepper, a pinch of chilli flakes, 1/2 grated garlic clove (optional), 
  • Salty a pinch of salt, 2-3 tablespoons of cold water, 
  • Sour 2 tablespoons of lemon juice, a pinch of basil, 
  • Bitter a pinch of turmeric, a few fresh thyme leaves. 

Mix all the ingredients until they combine. Add the veggies to your homemade garganelli pasta, pour over with the dressing and mix well.
